Hi! I'm Lindsay Ferrier. You might remember me from a blog called Suburban Turmoil. Well, a lot has changed since I started that blog in 2005. My kids grew up, I got a divorce, and I finally left the suburbs for the heart of Nashville, where I feel like I truly belong. I have no idea what the future will hold and you know what? I'm okay with that. Thrilled, actually. It was time for something totally different.

One of the fastest ways I’ve found to lose weight (and feel better) is to reduce the number of carbs in my diet.
But bunless burgers get old FAST. That’s why I’m crazy about this recipe for completely carb-less buns that will satisfy your bread craving AND give you something to put around your burger. As an added bonus, you probably already have the ingredients for cloud bread in your kitchen. Even if you’re not going the carb-free route, these buns are only 40 calories per serving. You can’t beat that.
INGREDIENTS
DIRECTIONS
-Preheat oven to 300 degrees. Spray a baking sheet with oil and set aside.
-Separate the yolks from the eggs very carefully, making sure no yolk gets in the whites.
-In a bowl, mix together yolks, 3 tablespoons of cottage cheese (or whatever else you decided to use), and artificial sweetener.
-In another bowl, mix whites with cream of tartar. Beat the whites on high speed until they’re fluffy and form very stiff peaks.
-Very carefully fold the yolks into the whites, making sure to keep the mixture fluffy.
-Scoop bun-sized mounds of the mixture onto the baking sheet. Bake 30 minutes, or until golden brown and crispy.
Eat right away, and store leftovers in a sealed plastic bag in the refrigerator. They keep very well.
Enjoy!

Totally going to try it! I am gluten/free because of headaches and I do miss buns. 🙂
