Hi! I'm Lindsay Ferrier. You might remember me from a blog called Suburban Turmoil. Well, a lot has changed since I started that blog in 2005. My kids grew up, I got a divorce, and I finally left the suburbs for the heart of Nashville, where I feel like I truly belong. I have no idea what the future will hold and you know what? I'm okay with that. Thrilled, actually. It was time for something totally different.

I got to make these fish tacos in the Betty Crocker test kitchen a couple of years ago and they’ve been a dinner staple ever since. You will not BELIEVE how easy and DELICIOUS they are. Every single member of my family loves them and they only take a few minutes to put together!
INGREDIENTS
DIRECTIONS
-Cook fish sticks according to package.
-While fish sticks are in the oven, mix together taco seasoning and mayonnaise. Add cole slaw mix and stir until blended. Let sit for five minutes
-Warm taco shells in oven or toaster oven. Watch them closely so that they don’t get too browned.
-Cut fish sticks when done into bite-sized pieces. Fill taco shells with fish bites and cole slaw mix, top with taco sauce if desired.

Mmm, I make fish tacos with fish sticks and cole slaw mix, too! Never thought to mix mayo/taco seasoning with cole slaw, though. We also add avocado to ours which is pretty much amazing…
The avocado sounds great!

Oh Lindsay. Don’t take pictures of food at night in your incandescent lighting. It makes an otherwise nice dinner look not so nice. Sorry. The photo snob in me just balked at that picture!
But the recipe sounds like something my picky hubs (and not so picky kids) would eat! Thanks for sharing.
If you want beautiful food photos, my friend, you have come to the wrong place! 😉
