If you’re seeing bags of vidalia onions in the grocery right now, consider yourself lucky- they’re a rare seasonal treat! There are lots of different ways to prepare them, but one of our favorites is unbelievably simple and magically delicious.
INGREDIENTS:
DIRECTIONS:
-Peel off onion’s outer layer, slice off the top and the bottom.
-Use a spoon to scoop out a shallow bowl in the top of each onion. Quarter the tablespoon of butter and put two of those quarters (1/2 tablespoon) and 1 bouillon cube or 1/2 teaspoon bouillon granules into each “bowl.”
-Place onions inside a microwave-safe bowl. Cover the bowl loosely and microwave for eight minutes (I put a plastic container top over a glass dish.)
Enjoy! Trust me, you’ll love them!

I do this but instead of the microwave, I loosely wrap it in foil and throw it on the grill with whatever meat we are having.
Smart! I’ve heard of this, but have never tried it. How long do you leave them on the grill?
Just so happened that I picked up a vidalia today – saw this come across my google reader and made it tonight. DELISH! Like French Onion soup without the bread and cheese. Definitely added to my recipes – thanks for sharing!
